Brewing - Ginger Peach Hefeweizen

Eric and I bottled our Ginger Peach Hefeweizen a few days ago. Overall, the process went smoothly. We dealt with a boil over during the mash, and we lost a lot of wort in our second fermentation due to the space occupied by fruit in the carboy. The most embarrassing event, though, was when we were 75% done with bottling and realized that we had forgotten to add the priming sugar. We had to empty all our bottles and refill them, but they're now down in the basement happily becoming carbonated.

Eric and I split a bottle the other day to get a sense of how the Hef might taste when it's done. We think it's going to be good :)
